Funny thing is, I know the answer to some of those questions, especially the plurals. The plurals are the way they are because of their origin (“goose” having a Latin origins, while “moose” is Eastern Algonquian, which is a far more recent root being just the 17th century). Most words will reflect their originating language, whether Latin, Germanic, etc., and subsequently their plurals. Some break the trend, but for other, justified reasons.
The reason English is so crazy quite simply is that it is a melting pot of languages and their rules shoved into the “same room.”
